Wasn’t feeling all that great this week - hubby had caught the flu bug and passed me the fever … but it’s a light fever and it likes to occur only at night *sigh* so no point see a doctor, cuz unlikely to get MC anyway.
Still, we have to eat and i made this very simple soup - 4 ingredients only (not counting oil, pepper/ chilli) and we had it for dinner. I happened to have some wanton skins in my fridge, was planning to make wantons but er … never got around to it - still i had 2 of the ingredients: wanton skin and minced pork.
This soup was made by ma jie and i suddenly recalled this yummy soup. It’s very simple to make and it’s ready within 15 minutes time!
Wan Ton Skin Soup with Minced Pork
Servings for 2
Ingredients
1 garlic - sliced thinly
200g to 300g of minced pork
a small handful of ikan billis (just give it a quick rinse)
Wanton skin (i had about 70 cents worth - bought from the wet market)
Method
1. Put 1 tablespoon of oil into a heavy based pot or wok. Heat and add garlic slices, stir fry till slightly browned.
2. Add minced pork, quickly stir the meat so that the meat crumbles into small bits. Stir till all the meat is cooked.
3. Add the ikan billis and 3.5 rice bowls of water (about 1 litre)
4. Bring to a roiling boil (for about 4 to 5 min) and put the wanton skin piece by piece into the boiling water. Resist the temptation to dump in the lot as it will means u get wanton skin LUMP soup only.
5. After the last piece has been added, let it boil for 3 more minutes.
6. Taste and see if you need to add extra water/ salt. The ikan billis is salty so gauge and see if it’s to your taste. Pepper to taste (personally i added a small chilli - sliced finely into the soup).
You can replace the ikan billis with dried shrimps instead - rinse and drain. Add to the oil, stir fry on high heat for about 1 min then add in the garlic. Then the rest of the steps follow (omit the ikan billis when adding water).
You can omit the skin and cook rice to eat with the soup - your preference.
